Happy MLK weekend, friends! While I hope you enjoy your day off from work, school, and all the mundane bits of life, I truly hope you take a moment to consider the life of Martin Luther King, Jr. and everything that he accomplished to make our country the place it is today. It’s not perfect by anyone’s standard, but it’d be a whole lot less perfect without Dr. King’s legacy.
Alright, mini-sermon complete. Let’s get to the meaty part of this post! (Get it? Because we’re using poultry in today’s recipe?) If you have people over to celebrate the holiday weekend, or if you are perhaps perusing the Internet for a quick and easy addition to your Super Bowl party lineup, you’ve come to the right place!
Chicken stuff is a get together staple in my family. It’s my grandmother’s recipe, and that’s what she called it, so that’s how it’s going to stay. I loved my grandmother dearly, and I miss her every day (but that’s a completely different blog post), so making this “stuff” always puts a smile on my face. And I bet it’ll do the same for you because it’s stupid easy to make, and you only need five ingredients.
CHICKEN STUFF
Prep time: 5 minutes
INGREDIENTS:
1 can chicken breast
1 tbsp mayonnaise
8 oz. cream cheese, softened
1/2 tsp seasoned salt
1/4 tsp garlic powder
1. Mix thoroughly in a food processor. I pulsed the chicken a few times first, and then added the rest of the ingredients. From there, I set it to “low” a few times until it mixed into a creamier texture. (Isn’t my new food processor the best?!)
2. Serve with your favorite crackers (I prefer Triscuits because there are enough flavors to please anyone, and they’re substantial enough to handle this hearty spread!)
I doubled the recipe, so you wouldn’t have quite this much if you only do what’s listed above!
Yep, that is it! And no, I’m not kidding. It’s so simple but delicious. Really more like addictive because I swear we can make tons of this stuff, and there never seem to be any leftovers to speak of!
We have some chicken stuff chilling in our fridge right now, and if I could share it with one person today yesterday, it would be my little brother, Ian, because he’s now the big 1-6. I should probably stop using the term “little brother” (he’s taller than Spencer at this point), but it’s just not going to happen. Not ever.
For those of you who haven’t met my brother, here he is rocking the whitewashed denim and chubby cheeks combo like none other! (Also, I feel like we should all take a moment to appreciate those bangs on the brunette in the back. Those were the days…)
